1 cup all purpose flour
1 cup sugar
½ cup unsweetened cocoa powder (bakekakao)
¼ teaspoon baking powder (bakepulver)
½ teaspoon baking soda (natron)
¼ teaspoon salt
¾ cup milk at room temperature
¼ cup vegetable oil (solsikker olje)
½ teaspoon vanilla
1 egg at room temperature
Grease and lightly flour the sides of a 9x9 in square baking pan (or 9 in round baking pan). Cut a piece of waxed paper (bakepapir) and cover the bottom of the pan. Set pan aside.
In a mixing bowl combine flour, sugar, cocoa powder, baking powder, baking soda and salt. On another side, add the oil and vanilla to the milk. In an electric mixer, blend the dry mixture and the wet mixture at low speed until combined. Beat on medium speed or 2 minutes. Add egg and beat 2 minutes more. Pour batter into prepared pan.
Bake in 176°C oven for 25 to 30 minutes or till a wooden toothpick comes out clean. Cool cake on a wire rack for 10 minutes. Remove cake from pan. Cool thoroughly on a wire rack.
