We tried it a sunday, after shopping in Sweden the celeriac (much cheaper than in Norway). The taste is definitely delicious, and not difficult to make at all. You only need some special items, like miso. A lot of vegan recipies add miso, to get the "umami" taste, and it definitely works. This recipie is DELICIOUS.
2 persons one dinner, or sides for 4 persons. Oven 200 degrees, cooking time 25+20min.
1 celeriac. Peel and cut in 1 cm "steaks", score them (make incisions on one side, like a checker)
mix in one glass:
2 tbsp olive oil
1 tsp mustard (dijon, nice)
1 tsp maple syrup
1 tsp soya sauce
For the sauce:
75 g butter
1 small onion in small bits (I used a big red onion and it was perfect)
2 cloves garlic, minced.
1 tsp mustard
1 tsp miso paste
1/2 tsp curry powder
1/2 tsp each dried thyme and rosemary
salt and pepper to taste
1 tbsp chopped parsley
150 ml cream (I used whipping cream)
juice of 1/2 lemon
1 tsp agave honning
In an oven tray over baking paper, put the celiac "steaks" and brush them with the mix that you have in the glass. Bake for 25 min, flip and brush with any remaining mix. Bake for another 20 min.
Meanwhile, prepare the sauce. Put in a small saucepan the butter, onion and garlic, and let it get transparent/cooked.
On the side, measure and mix the remaining ingredients together in a cup.
When the onion is ready, add the ingredients you had in the cup and stir over the warm saucepan, so the mix gets warm and starts to bubble. It is ready!!
Plate the celeriac steaks and serve with the hot sauce on top. Fantastically easy and delicious.
